Pumpkin Muffins Low Carb

 Hi There..
 
 We are finally getting the rain here in NC that we needed so badly all summer.
 The grass is greener than its been in months and the 75 degree temps makes me smile.

 I'm so happy to have you visit me.  Wish we could sit out on the screened porch with some hot spiced tea and these muffins moist, delish Muffins.  They make the house smell like Fall and I know how Ya'll love anything Fall:)

  Even if weight loss and good health isn't important to you- you're gonna love these~!
 I mean seriously- a 5 minute cozy, comforting food on your plate with almost no mess to clean up..
 That's my kind of recipe..


 Lowering your daily carb count really is the secret of weight loss and feeling healthier and more energetic.  Carbs in foods slow us down mentally and physically and make our bodies have to work 5 times harder.. That's tough on the organs folks:) 

   I've lost 36 pounds since feb. 27th 2015 and never felt hungry or deprived. My glucose numbers are lower as are my cholesterol readings and blood pressure.
In general I feel better than I have in 20 years and all while enjoying yummy food.

 Sites, forums and groups all over the internet can give you all the information you'll need to change your life while enjoying a cyber community of helpful- informed- supportive folks.
  Does'nt get better than that ,right?

 Ingredients for 1 muffin                                                                                                                                                                      
  • Muffin

  • 14 cup flax -  golden flax seed meal
  • 12 teaspoon  Baking Powder
  • 4 tablespoons  splenda or sweetner of your choice
  • 12 teaspoon  Cinnamon
  • 12 teaspoon  Pumpkin Pie Spice
  • 2 12 tablespoons  Pumpkin Puree (canned)
  • 1    Egg
  • ****************
  • mix all ingredients in a small microwave tolerant bowl=  3 mins on high.. let cool
  • Frosting

  • in a separate bowl

  • 1 ounce  Cream Cheese
  • 1 teaspoon almond milk or 1 teaspoon cream
  • 3 tablespoons  Splenda
  • crushed walnuts- sprinkle on top
 only 2 carbs per muffin- woooooooohoooooooooo ..... ENJOY~!

   This décor is courtesy of Country Living and was just too cute not to share.  I have a real " thing " for owls so of course it caught my eye..

Fall of the Past


  I have a few things going on here at the ole homestead:)   so I thought I'd stroll down memory lane and invite ya'll to go with me.

  These photos are from 2012...its a bit sad to admit I don't know where most of the items I used disappeared to ..  That's what happens when you move and from a home you've been in 17 years, in a week~!     I hope someone else is enjoying the items in their fall home.  Every moment has a silver lining and to think its bringing someone else a smile is good enough for me.
 
I'm happy I have the photos though..

Dining room Mirror



  I saw a mirror at the Wayfair site but the price seemed a bit high to me, so I didn't put it in my cart..

  On Wednesday I stopped in my local goodwill store since I was right across the street from it getting my groceries.

  I was just strolling along and something caught my eye.. A large mirror with a dirty, brownish frame.   Luckily I didn't get turned off of it at first glance..  Walked over, looked at the tag, 12.00.~!
  It costs me more than 12.00 when I stop at burger king:) so I snatched it up and home I went..

  The mirror was easy to remove, then a good scrub n rinse of the wood frame and let dry..

 2 coats of rustoleum white spray paint and in 3 hours it was back together and ready to hang..

  I'll take a full shot of the dining area when the plates and art go on the wall.. But I just couldn't wait to show you my 15.00 mirror.. 12.00 -mirror    3.00 spray paint..  cheep- cheep- cheap enough:)

here's the one I saw at Wayfair..  I like mine better and am so happy I waited and found a great price on my new treasure.

Fall Printable or Screensaver for Ya'll


  I've noticed Fall has begun to show up in blogland, so I thought I'd offer this fall printable to ya'll..
 
I'll be changing out some draperies this weekend so my fall decorating can begin next week. Today is my weekly cooking too.  It helps me to stay on course if my main foods are cooked and in individual storage bags in the fridge so I can just choose-nuke and eat:)
 
  I saved some fabric scraps to make new pumpkins and ordered a fall arrangement which hopefully will arrive soon.    I'd like to try one in a quilted pattern this year .. My sewing skills are minimal but it can't hurt to give it a try.
 
  It's a bit cooler here so I'll spend some time out on the screened in porch and do some reading or maybe take my singer out there and sew some..

Perfect Pasta ..Low Carb #1



 In February I was diagnosed with Type 2 diabetes..

  I chose to follow a low carb diet versus the all American diabetic diet and it was the best decision I ever made..

  On the barest minimum of medication I was able to lower my ac1 from 10.9 to 5.3 in 6 weeks and have maintained that since..:: sorry, those numbers will only make sense to diabetics::
 So if anyone tells you diabetes cant be controlled its only because they don't know how. As an added gift from God, as soon as my blood sugar numbers were in control , my blood pressure went from 240/170 to  a steady 120/80 without any medication. I am so grateful for what I feel is a miracle I participated in..I feel healthier and happier than I have in several years.
 I am adding the recipe and cooking instructions in a printable so you can use it as a recipe card.
wooooooooohoooooo  people.  only 4 carbs per serving.  regular pasta is 44 per 1/2 cup:(
 
 
 
 I got my pasta machine and my soy flour from amazon.. I checked different places and they were the cheapest...  This machine can be used for spaghetti- lasagna noodles or alfredo noodles.  I used it the other day on its thickest setting to roll out dumplings for my chicken stew..  Pasta and Dumplings- wow..  
 
You don't have to use a drying rack. The noodles can be layed on paper towels that have been lightly dusted with soy flour.
  Make sure to check the carb content of any bottled sause you use OR the carb content for your crushed tomatoes..   I don't use anything over 5 carbs per half cup.
 ENJOY~!  its so yummy and so much better for you.
