Pumpkin Muffins Low Carb

 Hi There..
 
 We are finally getting the rain here in NC that we needed so badly all summer.
 The grass is greener than its been in months and the 75 degree temps makes me smile.

 I'm so happy to have you visit me.  Wish we could sit out on the screened porch with some hot spiced tea and these muffins moist, delish Muffins.  They make the house smell like Fall and I know how Ya'll love anything Fall:)

  Even if weight loss and good health isn't important to you- you're gonna love these~!
 I mean seriously- a 5 minute cozy, comforting food on your plate with almost no mess to clean up..
 That's my kind of recipe..


 Lowering your daily carb count really is the secret of weight loss and feeling healthier and more energetic.  Carbs in foods slow us down mentally and physically and make our bodies have to work 5 times harder.. That's tough on the organs folks:) 

   I've lost 36 pounds since feb. 27th 2015 and never felt hungry or deprived. My glucose numbers are lower as are my cholesterol readings and blood pressure.
In general I feel better than I have in 20 years and all while enjoying yummy food.

 Sites, forums and groups all over the internet can give you all the information you'll need to change your life while enjoying a cyber community of helpful- informed- supportive folks.
  Does'nt get better than that ,right?

 Ingredients for 1 muffin                                                                                                                                                                      
  • Muffin

  • 14 cup flax -  golden flax seed meal
  • 12 teaspoon  Baking Powder
  • 4 tablespoons  splenda or sweetner of your choice
  • 12 teaspoon  Cinnamon
  • 12 teaspoon  Pumpkin Pie Spice
  • 2 12 tablespoons  Pumpkin Puree (canned)
  • 1    Egg
  • ****************
  • mix all ingredients in a small microwave tolerant bowl=  3 mins on high.. let cool
  • Frosting

  • in a separate bowl

  • 1 ounce  Cream Cheese
  • 1 teaspoon almond milk or 1 teaspoon cream
  • 3 tablespoons  Splenda
  • crushed walnuts- sprinkle on top
 only 2 carbs per muffin- woooooooohoooooooooo ..... ENJOY~!

  1. Oh Sonny, thank you so much for this wonderful recipe. I am on the Atkins Diet and have lost 40 lbs. I still want to loose about 15 more but seem to be at a standstill.
    So thank you so much for the muffin recipe. I am going to try it immediately.

    Have you heard about the "Fat BOMBS"? Adkins has some recipes if you go on google they will pop up. My friend was at a stand still and she made some and she really starting loosing again.

  2. Sonny! Good for you!!! I am so proud of you, girl! You have done really well. My Hero and I started on the Whole 30 program today. It's gonna be a challenge but it is especially good for those of us that have inflammatory issues. The weight loss would be a bonus to me- but I am trying to calm my system down. I will keep this recipe for the first of November. xo Diana

  4. It is exciting to see you posting regularly again. Glad to know you are having the success you want with weight loss. Did you know that I have lost 56 pounds? Kind of hit a plateau for now but am sure I'll get back to success. Exercise and calorie counting is what works for me. HugsXXXX

  8. Making one muffin at a time is ingenious. No worry of overeating, right? My husband and I have been on low carb for 3 months and have lost over 30 pounds each. Best part of low-carb is the loss of cravings. Thanks for the recipe, I'm going to try this one when we start feeling the need for a sweet treat.

  9. I have just started a new plan for the (so many times, I can't count) last time. This time I will be GOOD. I quit wine for the first few weeks and then I will see. That is my downfall. You mentioned all of the sites available, I have been on many but nothing really drew me in. Do you have time to give some links? I will post as hubby, Rollie, but this is Gayle! Just found your blog, love it!
